Temperature Sensor / Switch

OK, I'm trying to control surface temperature and I need to either buy or build something that will allow me to do this. I want to keep the surface temperature between 200 and 500 degress F. I need a sensor / switch combo that will complete a circuit if the temp goes below 200 and another circuit if it goes above 500 degrees f.

Would anyone have any suggestions as to how to go about this? I'd really appreciate it. Thank you in advance.
